The Rituals of Holy Week

The "Perdoni" of Taranto: Carmelitan Confraternity members, that in couples, at at 3:00 PM on Holy Thursday, leave the Church of Holy Mary of Carmelo Mount for a pilgrimage to each Old and New parishes, where the Altars of Repositioning are set up. Their clothes are unique: they are barefoot and wears a white coat, they have a black rosary hanging at the waist that is decored with sacred medals and a crucifix, two scapulars embroidered with the words "Decor" and "Carmeli" in light blue silk, and a white hood with two little holes for the eye.

The Noicattaro Bonfire: on Holy Thursday, in the churchyard of the Church of Our Lady of the Lama, dry wood, put by citizens during Lent, burn all night long, the significance of this tradition is to ensure a good harvest. This tradition recalls the biblical events of the fire where Peter denied Jesus three times.

The Living Passion in Alberobello: every Good Friday, Alberobello transforms into a natural stage where more than two hundred performers reenact the Passion of Christ. Among the trulli and olive trees, the performance brings the Gospels to life in a unique setting.

The Holy Friday "Mysteries" Procession in Castellana Grotte: since 1880, this evening procession features eight statues depicting scenes from the Passion of Christ. The statues travel through the streets of the town, evoking symbolic moments such as the flagellation and the crucifixion.

The Sorrowful Mother Procession on Holy Friday in Gallipoli: at noon on Good Friday, the confraternities, dressed in black, begin the procession carrying lit candles. The procession concludes in the evening with a blessing at the sea and the fishing boats, symbolizing the deep connection with the maritime tradition.

Trulli and Masserie: Symbols of Puglia

The Trulli: Unique Dwellings Staying in a Trullo is a unique experience to discover Puglia from a different perspective. These dwellings, dating back to the 16th century, are made of living stone and lime, with gray conical roofs that ensure coolness in summer and warmth in winter. Recognized as a UNESCO World Heritage Site, the trulli represent an authentic treasure of Puglian tradition.

The Masserie: Oases of Relaxation and Taste The masserie, rural buildings from the 16th-17th centuries, embody the farming culture of Puglia. Built with white stone and often surrounded by ancient olive trees, they offer the perfect blend of nature, history, and comfort. Many of these masserie include private wineries where guests can taste the region's typical products, providing a relaxing and authentic experience.

The Culinary Tradition of Easter

Puglian cuisine is a celebration of authentic and symbolic flavors, especially during Holy Week.

The "Benedetto": This Easter appetizer is made up of capocollo di Martina Franca, fresh ricotta, asparagus, taralli, hard-boiled eggs, and slices of orange drizzled with olive oil. It is all beautifully garnished with an olive branch, symbolizing a blessing.

Main Dishes: The main stars of the Easter table in Puglia are lamb, often roasted, baked, or cooked with red wine, and accompanied by “Cuddhura”, a traditional Salentine bread shaped like a dove, with a hard-boiled egg at its center. In Salento, on Good Friday, a special dish called cavatelli al vincotto is prepared—this pasta, colored red with vincotto (a sweet, reduced wine), symbolizes the blood of Christ.

Traditional Easter Sweets
